4cups peeled and cubed potatoes. (keep peels)
2cups water or Veg stock
1 small onion sliced
1 TBSP oil
5 sprigs parsley
1cup grated cheese
pinch garlic powder
Boil potatoes in water or Veg stock with salt.
Saute the onion in the oil. In a blender, blend the sauteed onion, potatoes skins, and parsley. (Us as much or little of the potato skins as you like. Also some water or Veg stock from the boiling potato help blend the ingredients) Add the blended ingredients to the boiled potatoes. Turn the heat down and add all other ingredients. Wait for the heat to melt cheese and serve.
