Hush Puppies

Ingredients

2 cup corn meal
1 cup flour
1 tsp baking powder
2/3 tsp soda
3/4 tsp salt
1/2 tsp pepper
2 eggs
1 cup buttermilk

Instructions

Mix all the dry ingredients together well. Then add wet and mix until you have a even pasty mix. Shape this mixture into half inch to one inch balls. Fry in oil until golden brown.

Notes

1. To add flavor you can also add peppers to the mixer, such as banana peppers, green chilies or jalapenos.
2. Another great item to add is cheese. You can add shredded cheese into the mix before making it into balls or take a cube of cheese and cover it with the mixture. This makes for a nice hush puppy with a cheesy center.
