Pig Pickin' Cake

What is a Pig Pickin' cake, you ask. It is a light moist cake. Full of citrous fruits. Such as pineapple and Mandarin Oranges. Great for any summer day. Why call it a Pig Pickin' cake? It got this strange name because it is the cake of choice for a Pig Pickin'. Pig Pickin' being a Southern get together were a whole pig is cooked and served to the group.

 

Ingredients


1 Box Yellow cake mix
1 Small Can Mandarin Oranges
4 Eggs
1/2 cup Oil

1 Can Crushed Pineapple
1 Small Box Vanilla Pudding
1 Container of Cool Whip

 

 

Making the cake:

Place in a mixing bowl the cake mix, juice from the Mandarin Oranges, the eggs and oil. Beat for about 4 minutes. Once you have mixed this add the Mandarin Oranges and beat for another minute.

Next, Pour into 3 greased and floured 9 inch cake pans. Bake at 325 F for about 25 minutes.

Some ways to know the cake is finished are browning, pulling away from sides of pan and you can always pick it with a toothpick in the center. If any batter sticks to the toothpick you know to cook longer.

Making the Icing:

In a large mixing bowl, mix together the juice from the can of pineapple, vanilla pudding mix and cool whip.

Once you have mixed the Juice, pudding and cool whip together. Then it is time to add the pineapple and mix again.

It is time to frost the cake with the icing, stacking each layer of cake. Spreading the icing between each layer and then the whole cake.
